Easy and Fast Meals

I am starting NS in just a few short weeks, and I am concerned about what we will be eating - I dont want to spend a lot of time cooking! Can anyone share a quick or easy recipe that they enjoy?

Here is one that I fix all the time - Buy a bag of already cooked frozen meatballs, and a jar of spaghetti sauce. Let those two simmer on the stove until heated through. Pour 3 or 4 meatballs and some sauce into a hoagie bun and top with shredded mozarella cheese. Super easy meatball subs. I usually just serve with a tossed salad and dinner is done!

When I started LPN school, I picked up a few cookbooks for quick easy meals. I'm not a big fan of cooking, but a lesser fan of spending a ton of cash on take out. heehee.

Check out the cooking section of a local book store. I found quite a few good books on easy and quick meals. Rachel Ray has a few and a lot of her recipes are quite tastey and easy and quick.

With the cooler months fast approaching (ughh!) I am not as bothered by cooking. Swear by my crock pot! Throw some things into the crock pot, set it and forget it until dinner..always nice to walk into a home that smells of a great home cooked meal. One days off, I'd make a larger quantity of the meal I was preparing, feed the crew dinner and freeze the rest for another dinner for another day.

my family loves this. One pound cooked chicken, one bag frozen veggies, one can of cream of chicken soup, add a little milk and bake...serve over instant rice...the variations are endless!

im having the same issue. i have to eat gluteon free so its going to be hard to fig out quick meals and stuff to pack for school since i cant eat pretty much anything in the caf.

anyway something easy i do is i buy chicken legs or what ever is the cheapest on sale ..i got this seasoning i bellieve its called grillmates herb and garlic..i put olive oil on the pan and chicken then season both sides..u can add some veggies and season also..leave in the oven for an hr on 375 and u have a quick meal thats so good i usually make potatoes and study while its cooking!

Frozen veggies are a liifesaver! I always stock up when my grocer has a sale.

My favorite quick easy meal is Red Curry. It spicy and delicious but may not be everyone's thing. I saute up some protein (chicken, steak, shrimp, tofu). Then combine a ton of fresh veggies (snow peas, sliced carrots, broccoli, zucchini and anything else I can find), coconut milk and thai red curry. Simmer for a bit and serve over rice......sooo good.

My crockpot is my best friend! I do everything from a roast, to stews, chili, soups and my favorite..........lasagna in my crockpot!! It is the tastiest. I make my own sauce a little runnier than usual. Spray the bottom of my crock, layer as follows: meat sauce, ricotta, spinach, uncooked lasagna pasta, meast sauce, ricotta, spinach etc until 3/4 full, then top with plenty mozzarella cheese. Cook on low for 4 hrs and voila!

that sounds good but i dont think it would work for me. my crockpot is a wimpy little thing.

I make doubles of meals at a time and freeze one for later.

I also prep meats w/marinade and freeze them in portions - so that when I wake up in the morning I just grab the bag I need and let it defrost in the fridge - throw a veggie and a starch with it and am good to go.

A cooking day on the weekend can save a lot of time by just making meals in advance for the week or prepping everything. If you look for websites about cooking for a day and eating all week/month you can find a lot of info and yummy recipes.

Ingredients

1lb ground beef

2 cans of Campbell's beef vegetable soup, (the alphabet soup)

Instant mashed potatoes, or make them from scratch if you prefer

Brown one pound of ground beef in a pan and drain off the grease, combine the hamburger with the two cans of soup, DO NOT add water. Place the beef mixture in the bottom of a casserole dish and top with mashed potatoes.

Bake at 375 until heated through, usually the soup mixture will bubble up around the sides. A quick an easy casserole recipe. Hope this helps, enjoy. :clown:

Chicken stir fry for two

1 lb Sliced or diced, uncooked chicken breast (the smaller the cut, the faster it cooks)

1 can stir fry veggies, drained (I think the frozen waters the stir fry down too much)

1 cup cut fresh broccoli

1/2 cup chopped fresh red pepper

1 teaspoon dried red pepper

1 tablespoon hoison sauce

1 tablespoon minced garlic (I buy the preminced in the jar)

Soy sauce to taste

Put wok on stove top, heat up to medium. Throw in chicken and garlic and cook for a 3 minutes. Throw in broccoli and red bell pepper. Cook until chicken is not pink in the middle. Throw in drained canned veggies. Toss in dried red bell, hoison sauce, and soy sauce. Cook until heated through.

I always serve it over cooked whole wheat pasta.

I also have one of those george foreman grills and I cook chicken or fish on it and sliced fresh veggies. Takes about ten minutes.

7 can chili

Ground turkey

3 cans of your favorite beans

2 cans of tomato paste

1 can of corn

1 can of tomatos

cook, serve, clean out your colon
