Kind of a silly question, but I've been wondering for some time now. do you have enough time, is there a rule preventing it, do you try to limit fluid intake because you don't have enough time to go to the bathroom?

1. I have ample time to use the restroom. People who do not prioritize using the restroom are questionable. After all, how can you provide care to others if you do not address your own basic needs?
2. I drink coffee during my shifts. In fact, I am at work right now. A 24-ounce gas station mocha is sitting in front of me, and I sip on it as needed. :)
I don't drink coffee. The smell makes me ill (I can't figure it out either). Unfortunately, instead of coffee I consume Mountain Dew. And that my dear friends is worse than a coffee habit.
I was addicted to that for years. I would have two a day. Started in high school having a can every morning before school and continued my bad habit until I was 31. Never diet, always the regular Mt Dew.
I haven't had one in 2 years and don't miss it. What helped me quit was switching to iced tea. I started by ordering a passion iced tea or green iced tea, unsweetened from Starbucks. Also would drink the honest tea (the ones in the glass bottle, or look for ones with around 12 g of sugar). It still gives you sugar and a bit of caffeine, but not as much.
Not that you are looking for advice, just thought I'd share:)
We're not allowed to have drinks at the nurse's station, but I drink coffee on my way in to work and on my break."
....mmmm...same here...but there's a travel mug of coffee glued to my hand every morning. I sip on it for the first few hours. I think I officially wake up around 10 a.m. Then I get another cup of coffee after lunch. When I do double shifts I'll have a 3rd cup, but then I get jittery. I drink water intermittently throughout the day.
When I work my other job, they keep drinks in the break room😞
As for bathroom breaks...go when you have time.
I think places that don't allow drinks at the nurses stations are insane. How in the world can the nurses get through 12 hour shifts without having frequent, convenient access to water?!
I drink one coffee upon waking up, and one at about 2AM. Both are half-strength caffeine. I also try to drink at least a liter of water at work, sometimes more.

When I worked nocs, I brought a cup
To work and sometimes, often, had more during the shift. Over time, I started drinking diet red bulls during the shift, as they were easier to pack in my bag.
