Lemon and sugar?
We generally use butter and maple syrup or a fruit compote of some kind. Oh and use a mix. You just add water and you can make as much or as little as you like. Links to some pictures (can't get 'em to post, sorry):

The kids like the English pancakes - crepes - with lemon & sugar - very traditional. However, they don't get them because of the tooth erosion thing - you know acid plus sugar = eroded enamel!! Hahaha - I'm mean!
Actually I'm doing American style pancakes with fresh blueberries a la Jamie Oliver's recipe in the Red Nose Book from Sainsbury's!
Do they celebrate Shrove Tuesday in the USA?? Or is everyday pancake day??

THe lemon and sugar sounds like a german pancake recipe. (they are really good). THe american pancake is more apt to have maple syrup and butter maybe some cinnamon...

We DO celebrate Shrove Tuesday--Mardi Gras. New Orleans is the biggest, it lasts ~ 10 days, but ends @ exactly midnight tonight.

I tried cornmeal pancakes @ International House of Pancakes last week. Very good. I also like macadamia nut pancakes w/coconut syrup, but they taste best when I'm on vacation in Hawaii!

Episcopal (Anglican) churches in the US celebrate Shrove Tuesday (typically, with a pancake supper, often open to the community and/or serving as a fundraiser for the church).
But we eat pancakes all year 'round ... :)
(Mardi Gras, while it also comes from the tradition of preparing for the season of Lent, is a Roman Catholic tradition, while Shrove Tuesday is uniquely Anglican.)

I'll be making the real deal, it's an 18 year tradition for us, we'll have brown sugar and lemon juice, jam, cinammon and sugar, and golden syrup as our fillers. The kids (7+3) love it because that's all we have dinner, what a treat!!
Have yet to try a pancake race though.
