Nutrition, IMO, is one of the easiest pre-reqs. I took it in the summer, 7 1/2 weeks, studied about 1 hour a day, and got an easy A. You already seem like you have good study habits, so I think you can handle it. Good luck:)
ETA: I also think it's a good class to take with A&P 2 because the digestive system is covered in both classes, so it aids in reinforcement of the material.
There's also a diet analysis that we had to do. You keep a diary of the food you eat over a week, and plug in the info. Takes about an hour.
We also did a case study on a family and their diets, and wrote up how we would change them to healthier choices to prevent the risk of specific diseases.
I took nutrition earlier this summer, and also got an A. Mine was online and I had a VERY proactive professor that related to the students extremely well. She almost seemed like a fellow classmate than a teacher the way she would communicate, but she was a huge knowledgebase in the field! Loved the class and learned a lot in 6 weeks. My course was full of busy work as well, assignments to watch videos and answer questions based on them, calculate BMI, diabetes risks, vegetarian lifestyles, etc. One fun activity for us was to take a typical fast food meal we would normally eat, calculate calories, fat and sodium from the restaurant's online nutritional info and then recreate a meal from the same menu with better choices. It was a real eye opener. Plus we had an open book midterm and final (timed 2-hour multiple choice test online, which really only took an hour to do). It's a very easy class, I would not stress about adding it to what you have already.
I took it online and it was the easiest class, EVER. We had to journal our diet for three days, then each week we analyzed something different about it. We had a similar assignment to Paco386's fast food project (btw, NEVER eat the subway double tuna!! lol) I was taking it along with AP1 and Chem and it was a perfect balance.
We had a class called 'Holistics'. I found it to be quite involved and one of my tougher classes; I totally believed this class was an easy A. Nutrition/health are topics I THOUGHT I had extensive knowledge in, until I took this class--Boy, was I schooled!
This class incorporated A&P, Patho, Chemistry, Psychology, Legal Issues, Micro, and probably everything else.
We were tested on pretty much the entire book. Great class, lots of work, lots of papers and group projects.
I loved this class because it encompassed all of my other science classes and I was able to actually apply my knowledge to 'what-if' scenarios.
You weren't taking a full course to begin with, so nutrition will be fine. I got unlucky and had a hard nutrition class. My teacher had a PhD and was completely anal about everything. She even took attendance in class lol. I remember spending 3-4 hours on projects that would get me 30 points -- which in the end was worth about 10% of my grade. Her tests easily had 100 questions. I have never had so much busy work in my life. Good thing I somewhat enjoyed the content and got through it with an A, but had to actually work for it

I am considering adding nutrition to General Psyc. and A&P2 for fall. (plus a 1 hour student success class seminar) I am wondering what everyone's thoughts are on this course. Would this be a good course to take with the other two? What is the class like? What kind of work is involved?
I don't work but will have two preschoolers at home, who will be in parents day out two days a week. My other classes are online. I did do A&P1 in the summer and got an A, also online.
Would appreciate any advice about this course.
