I was going to wait and post this January 1 but the fact is New Years resolutions are meant to be broken and I feel like I have to address some things now. I have recently been inspired by the Man cub who at 19  is not really a cub anymore but he will always be the man cub to me. Over the worst of the Covid quarantines he didn't do much except on-line school, sleep and eat. So when he finally got vaccinated and out and about he found that he had gained 30 pounds (13.6 Kilos). He has been working out, learning about nutrition and exercise and lost 20 pounds in two months. My progress has been slower but I broke 200 pounds today. Several years ago I lost 100 pounds and my body just stalled there. 

More about me: I had been treated for clinical depression for 8 years but finally have my head in a reasonable place. I have fibromyalgia, Inflamatory bowel disease and  NIDDMII. I also suffer from insomnia although that has eased back some lately and I have been a sober alcoholic for over 20 years.

In spite of the train wreck I just described I am always constantly committed to self improvement. I have hobbies for work life balance ad plan to do some traveling as soon as it is safe to do so and yes I have been vaccinated and will be getting my booster next week. 

So what I am planning is to change things up . I have managed my fibro pain with anti inflamatories and  Opioids, but plan to get off the opioids completely this year. Even if I have to deal with pain which never really goes away so be it. I have consulted with my endocrinologist and an integrative medicine specialist to try to get the IBS and Diabetes under better control as I can't tolerate the side effects of metformin. So I am setting out to lose weight exercise more and finally get my weight to a manageable level. 

I work aboout 40 hours a week with some overtime and for work-life balance I enjoy gardening, walking, foraging for wild food, learning new things on Wonderium and binge watching shows from time to time.

So tomorrow I post my physical stats and invite others here to do the same. We can share what type of results we are looking for, track our own and others progress and cheer eachother on.

Instead of the gym I decided to enlist the hubby into taking the dogs for a walk. My new dog has some destructive tendencies that get better when I wear her out. I can't manage both dogs by myself so I need someone to walk the Tennis Shoe (That's her nickname). We did 4000 steps and got my heart rate up to 120 so that's a good start for the day. I am doing some food preps today and juicing about 100 lemons. 

New favorite vegetable for snacking is Kohlrabi. It's a member of the brassica family ( broccoli family) but the edible part is a root like a radish. It has a mildly peppery taste and when thinly sliced and drizzled with a good olive oil and just a hint of pink salt is delicious and satisfying.

Root vegetables are unbelievably excellent when just simply roasted on a baking sheet. A little drizzled oil make for great veggies. I like beets best.

I've used kohlrabi as a SOUP bulb veggie. It looks like a fennel bulb.

I like roasted beets but no in my family does. I remove the top and bottom so it sits flat in the oven wash well and coat the outside lightly with a good olive oil and a bit of flake or pink salt. Them bake like a potato. They are super yummy.

Well I finally got my new smart scale synced with my I phone. Embarrassing stats to share with you all. ]

WT: 224

BMI : 36.5

Body fat: 48.4

There's a lot of other measurements but I does seem like I have a lot of work to do' But I am staying committed.

Hppy, can you share which scale you got?  I'm intrigued.

I belonged to an organic farm years ago and sometimes the share would include kohlrabi and I liked it.  It's good raw and cooked.  Haven't had it in a long time and will have to try again.   I eat roasted beets frequently, roasting them diced in my air fryer.

Question - what is it about pink salt? I've a big sodium issue.

Hppy, you can do this!

One thing that really seems to help me is to ride my AirDyne bike before eating. It seems that I benefit by having my metabolism a little higher, to deal with the incoming calories.

It really is just expensive salt.  Some people say it tastes better and other people tout that it has more minerals than regular salt, however, the amount of other minerals is minute and insignificant because you are not going to eat a whole lot of it to get benefits from these minerals.  It also doesn't have the iodine that table salt has.

There are two kinds of Pink Salt. There is Himalayan Pink salt that comes from mines in (you guessed it) the Himalayan mountains. It is touted to be one of the best tasting salts in the world meaning that you will most likely use less that the refined salt we use in America. There is also Murray River Basin pink salt from the Murray darling basin in Australia it comes in light delicate flakes and tends to enhance the taste of food rather than overpower it. 

There are some rather questionable health claims related to pink salt but I believe they have not been proven.

I've bought the Himalayan before and it tasted like salt.

I have been a gourmet cook for some years and while all salt tastes like salt there are differences in taste of different types of salt such a Agean sea salt from Greece, Fleur de Sel from France, Sel Gris from the ocean water in the Irish Sea especially near the Isle of Man etc ,,,

I like them all for their unique qualities and how they enhance the taste of food. Plus salt is essential to canning and preserving.
