I must have been mistaken, because i feel rushed.
The mentor asked why i did not submit Biochemistry task 1,when i only started the course April 25.
She has me as taking the course for a month, but it will take me at least 2 months,as i work 2 full time jobs.
That does not sound like a self paced program to me.
I have only been in the program a month, and already finished Care of the Older Adult in 2 weeks.

Your mentor's job is to make sure you stay on schedule. To that end, there is a certain amount of "hounding" that may take place during your weekly call. As long as you finish at least 12 credits per 6-month term, you're fine.
You should try to do a little bit every day. If you're anticipating taking two months to finish Biochem, will you be able to complete the rest of your classes by mid-September?
I have no idea how Excelsior is structured so I can't answer your first question.

If you take an entire two months to complete each course, you will only earn 9 credits per six-month term. On-time progress for WGU's program requires you to earn a minimum of 12 credits per term.
It's a waste of tuition dollars to work so slowly on the coursework in this type of program, IMHO. Perhaps a program with traditional 16-week semesters would have suited your needs more appropriately.
No,i do not need to take 2 months to complete each course.
I completed Care of teh Older adult in 2 weeks
It is just the sciences,of which i only have 1.
Those diagrams are hard to do,especially when you cannot use Powerpoint.
I really thought all performance assessments were writing papers, which is comes easy for me.
No, not all papers. There will be powerpoint presentations as well, and in the case of biochem, lots of drawings and diagrams.

I think it is reasonable to take a little longer for biochem. I assume Nutrition will be next and that's a quickie. They changed the OA recently but people are still breezing through it in a few days. Tell your mentor your plan. If your mentor is not a good fit you can request a new one, but people seem to be having problems with that lately in the social media group.

Just draw the diagrams by hand using an ink pen or colored pencils and submit.
Yes, and don't worry about your artistic skill or lack thereof. As long as you're able to get your point across, it doesn't matter.

I did biochem in a week with a full time job - even with a more busy schedule, I doubt it would take two months. I am guessing the mentor is just making sure you stay good with on time progress. No worries, if it does take a while as others have said maybe the next class will make up for it.
My mentor gave me 3 weeks for Care of the Older adult,so that one was finished 1 week early.
Humanities is a subject i really like, and since i like reading about history as a hobby I should be able to knock that out within 2 weeks.
I actually clicked on Intro to Humanities by accident and looked around some, and the course mentor called me and introduced himself on my phone voicemail. I hope he does that not think i started the course.
Most posters on Allnurses and other blogs i read were saying Nutrition took them almost 2 months.
I completed a Nutrition course in my Lpn program,so i don't think nutrition would be that difficult(I hope not anyway).

Nutrition through WGU can be done in a week. Two weeks if you are slow. They recently changed the OA to make it more challenging but people are still passing it quickly. The prerecorded cohorts are very helpful.
