allnurses.com had recent contact with National Jewish Health, a leader in caring for children with food allergies. Here is some information that might be helpful to either your parents or other non-medical staff members.
Since the 1990s, food allergies in children have shot up approximately 50%. In fact about one in 13 children (or about two per classroom) have some type of food allergy, making it essential that nurses, parents, children and schools know how to prevent, identify and respond to food allergy reactions.
In this video, four tips for parents are presented. What information do you find helpful to assist parents of children with food allergies?

I think the most helpful information is to help parents understand there isn't a such a place as "fill in the blank allergen free" zone and integrate that fact into the allergy actions plans.
