]Hello everyone! Since starting school my husband and I have not had the time to cook and prepare meals like we did before. I thought it would be fun for us to share quick, easy, and healthy recipes. I'm especially interested in meals that make good leftovers and that lean toward the healthy side. Thanks :loveya:

my favorite thing to make is salmon... i marinate it for 2 hours (but u dont have to if you dont have time!) in Kraft Free Zesty Italian Dressing, salt, pepper, and lemon pepper seasoning.... then i cook it on my trusty George Forman.... before cooking i prepare by putting a little more lemon pepper... cook until desired... its pretty good and fish is pretty healthy! sounds simple but it is very tasty!

I have the perfect recipe for u then. This is my home made chilli. I don't know how "home made" u want to call this, because everyone makes chilli and I'm sure there is someoen out there who has made their chili like mine. lol
Ingredients:
First, brown ur meat in a frying pan. Don't over do it though. Just make it nice and brown.
Second, drain the meat really good.
Third, pour your meat into a nice a pot.
Fourth, open ur brookes chilli beans, tomato soup, and can of tomatos (if u are using them) and pour them onto the meat. Stir. Add two small cans of water. Don't make it too watery though.
Fifth, add your two packets of chilli powder and stir. Also add chilli powder and cayenne pepper. A little goes a long way.
Cut ur onion and add onion, if desired.
Turn the burner on to high and let ur chilli come to a boil.
When it starts to boil, squirt some ketchup into ur chilli. Not too much. Two squirts should do.
Cover ur chilli and turn the burner to simmer.
Let it simmer for 45 minutes to an hour.
And hummm..yummm..
U have urself some delicious chilli.
U said that u like left overs. Well, u can definitely freeze chilli and store it in the refrigerator for up to three days.

^this also makes a good dip.
If ur having company...Buy some of those tortilla scoops and some shredded cheese and u will have everyone wanting u to make chilli....

Heck, that sounds really good! I don't really care for fish much, but my husband does. We gave away our little foreman grill years ago. I think I will get one of the big ones. We have 3 kids and I think they would like mini burgers and hot dogs on it.

CROCK POT - POT ROAST.
I do this on clinical days before I leave for the hospital.
Turn crock pot on Low. Add the following to the crock pot: Cut up 6 carrots, 1-2 onions and 4-6 potatoes. Add 1/2 cup water, one beef boullion cube(optional), 1 T worchestershire sauce (optional).
Brown all sides of a roast in olive oil and garlic.
Add the roast on top of all the veggies. Add salt and pepper. Cover and cook 6-8 hrs.
You can start this in 10 minutes and come home to a yummy meal.

Creamy Chicken and Rice
1 lb chicken breast, cut into 1 inch strips
1 can Cream of Chicken soup
3/4 soup can of water
1 tsp of garlic or a dash of garlic powder
1 cup of minute rice
Mix the soup and water in the crock pot, Add the chicken strips. cook on low heat for at least 4 hrs or high for at least 2 hours. about 20 minutes before you are ready to eat, add the rice.
This is my husband's favorite food. It's fairly low-cal too! I love because I can study while it's cooking, I don't have to tend to the pot.
I also enjoy crock pot veggie soup.
1 can of your favorite beans (I use baby limas)
1 can peas
1 can corn
1 cup of cut-up baby carrots
1 can of tomato sauce
1 can chicken stock
1 beef bulion cube
1/2 small onion, chopped
1 tsp garlic
1 tsp salt
1 tsp pepper
Drain about 1/2 the juice off the veggies and throw it all in a pot together. Cook it on low all day ( I usually mix everything up the night before and put in on to cook in the morning before I leave). Stir it before serving. Yummy, healthy, easy. It's great for days when DH and I will be eating at different times. I like to make some crescent rolls or fresh bread (in the breadmaker). So good, esp. on a cold day.
Obviously, you could put in whatever veggies you want. My mom makes it with veg-all and tomoatoes.

Thanks! I'm going to try this one. I suggest using baby carrots instead of large carrots. I don't have to cut them up and that saves me one step.

Homemade Pasta
2 large cans of whole tomatoes - seperate the juice
a few tbs chopped garlic
olive oil
frozen chicken breast
italian seasoning
penne (I just really love penne for this)
preheat oven to 400
lightly coat bottom w/ olive oil
put down boneless skinless frozen chicken breast
scatter around whole tomatoes cut in half - MAKE SURE TO TAKE OUT THE JUICE!
top with a few tbs of garlic
sprinkle italian seasoning generously
top w/ a small amt more of olive oil
pop it into the oven for 50 minutes
open the oven, dump in the rest of the tomato juice and put it back in for 10 minutes
meanwhile, pop on the penne and get that cooked, cooked, and strained
take the "sauce" out of the oven, throw all but the chicken in a food processor and pulse to desired consistency (I like it a bit chunky), cube up the chicken (which is VERY juicy and tender because of the acidity of the tomatoes)
toss this together (can add some small cubes of feta for added zest) and voila. I love this way more than canned sauce and its really only 5 min prep - 50 min wait and then 10 minutes more of prep.

I also love crockpot stuff and casseroles. You can do pretty much anything in either. Word for the wise though, dont go overboard on bisquick topping for casseroles. I learned the hard way
I really just throw a bunch of whatever fresh foods I have into the crockpot, add some packaged post roast/soup/whatever floats my boat kind of seasoning, cook it on low for the day, and then add some rice or instant potatoes right before I serve it.
Here's a quick and easy home-made pizza:
Take 1 can of tomato paste, mix it with 1 tblsp of garlic, a dash of italian seasoning, 1 tsp of sugar, 1 tsp of salt, and i paste can of water. Mix well and set aside (no cooking required).
Chop whatever veggies or meat you like on pizza. I usually use peppers, mushrooms, sun dried tomatoes.
Spread the sauce on top of a pita (I use whole-wheat), then top with cheese (a little parm, a little mozzarella is a good combo). Bake at 400 for about 10 mins.
Its a great alternative to delivery pizza, which is insanely greasy and unhealthy. Tastes terrific.

french bread works great too, just make sure you slice it thin
