I am eating some stupid carrots. I don't want carrots, I want chips. Or brownies. Or anything that tastes better than carrots.

I don't want to eat healthy. I want to be fat and happy. Until I see a scale or a mirror and then I'm like "Ug, why did I eat that brownie? And those chips? And 6 cookies? And sushi?"

But seriously, carrots are the devil.

NanaPoo, Brussel sprouts roasted in the oven with olive oil, salt, pepper and finished with some good Parmesan cheese are amazing. I don't like them steamed or boiled at all, but roasted? Amazing. Especially with a little bit of crispy char on the outside....yummy. They're one of our favorite winter things...and they're even good cold as leftovers :)

EVERYthing is good roasted. My family has always done cauliflower this way and in the last few years we've had some extras for Thanksgiving who were RAVING about the roasted cauliflower since they'd never had it that way. Mmmmm

Yes! Sometimes I roast it with broccoli and top it with Italian style bread crumbs! I think all veggies are best roasted too! :)

Eta: prednisone makes me want to eat my weight in carbohydrates. I have asthma and do anything possible to avoid prednisone. It also gives me the complexion of a teenage boy.

It was chilly and rainy here today, so we had my super-easy 5-ingredient (plus spices) chili and some skillet cornbread on the side.

EVERYthing is good roasted. My family has always done cauliflower this way and in the last few years we've had some extras for Thanksgiving who were RAVING about the roasted cauliflower since they'd never had it that way. Mmmmm

The brussel sprouts sound almost good but the cauliflower...I just might eat that! Even without cheese or gravy!

I made Mississippi Roast last night which is basically a chuck roast with butter, pepperoncini peppers, au jus gravy mix, and ranch dressing mix in a crock pot. Absolutely horrible for you. I did steam some broccoli on the side for good measure.

Tonight is tacos for hubby. DD and I hate 'em but he just has to have 'em once a week or he'll go into some kind of deep taco withdrawal.

Ooh, and speaking of chili! I've made buffalo chicken chili twice in the past month. It's amazing! It's at crockpotgourmet.com.

The Mississippi Roast is delicious! I try not to make it too often because it just can't be good for you...has a whole stick of butter in it and it is SOOO rich. DD and hubby love it.

And it literally takes me 2 minutes to throw into the crockpot before work.
