I'm a nursing student in my 3rd semester. Our clinical instructor is retiring after this semester after 40 years of bedside MedSurg nursing, and many years as a clinical instructor. She is a very direct person, not fluffy, not a go out to dinner or have a massage kind of person. Hoping for some ideas we haven't thought of.

Can't, sooooo against policy. Technically can't give gifts either, but school overlooks that.
Card....or flowers....or nothing at all (leave the gift-giving to her colleagues since it's a violation of policy).

Magazine subscription? Something professional or maybe something that she expressed an interest in (gardening, travel, cooking & entertaining, pets. For a change of pace, it'd be something she'd not do for herself. I knew of a gift of monthly tea products for someone who LOVED it - a little bit of pleasurable extravagance for a retiree.
