Hey everybody! I'm starting LVN school on Friday and I thought it would be a good idea if we got a thread (is that what this thing is called?) going for snack and food ideas. I know it would help me and maybe a few others! So post your go to grab and run snacks for school and clincals and those easy peesy dinner ideas! Thanks!

I've been getting some great ideas here and wanted to throw out a tech suggestion. I use zip list on my iPhone - they have an app and a website. You can use the recipe "clipper" kind of like you use the pin it function on Pinterest. I like that it saves my recipes all in 1 spot and it gives you the option to send the ingredients to your grocery list. I have not carried a paper list to the store since I started using this. I love it!!

I started school last weekend and man, now I completely understand the need for energy providing snacks and food! Thank you so much everybody for all of the recipes and snack ideas. I'm definitely going to have to start making and freezing meals! This was my light week at school an I still came home exhausted with no energy! Idk, if I'm going to be able to make dinner every night.

Any suggestions or directions on how to properly freeze food? Putting food in ziplock bags always gets freezer burn (at least when I do it. Hahaha).

If you can swing it, a Food Saver was an awesome purchase for me!! Costco always seems to have them on sale. Same w Kohls!

Also I like Ziplist bc you can have multiple stores! So I always have a grocery store and Costco list going and sometimes Target or Cvs too. Then when I finally make it there I can remember what I need lol

I agree about wine. It's the one thing that isn't quite "paleo" that I needed to get through my first year of nursing school. I couldn't have made it through 16 hour study days without it! ;)

This is a great thread. I've put on some weight in NS and I'm hoping to lose 10-15 pounds in the next 4 months. Great tips! Any suggestions for someone trying to cut the diet coke addiction? Cucumber slices in water or lemon in water are not doing the trick.

I recently kicked my diet soda habit. The only way I was successful was by gradually cutting down. 2 a day became 1 a day became 1 every other day became 1 a week. Etc. now I only really ever have them when used as a mixer if you kwim?! Lol do you like unsweetened tea or iced coffee? I really need a pick me up in the afternoons and having an iced coffee w a little bit of something sweet in it is the perfect thing for me. It's super easy to make in big batches, too!

This may not be along the lines of what you're looking for, but I thought I'd share one of my go-to main dish recipes. It's quick, it's easy, and it's tasty.

Braised Pork Chops

  • Prep/Total Time: 30 min.
  • Yield: 4 Servings

Ingredients

  • 1 teaspoon rubbed sage
  • 1 teaspoon dried rosemary, crushed
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 boneless pork loin chops (1/2 inch thick and 4 ounces each)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3/4 cup dry white wine or apple juice, divided
  • 1 tablespoon minced fresh parsley

Directions

  • Combine the sage, rosemary, garlic, salt and pepper; rub over both sides of pork chops. In a large nonstick skillet, brown chops on both sides in butter and oil. Remove.
  • Add 1/2 cup wine or juice to the skillet; bring to a boil. Return chops to pan. Reduce heat; cover and simmer for 8-10 minutes or until meat juices run clear, basting occasionally. Remove chops to a serving platter and keep warm.
  • Add the remaining wine or juice to the skillet. Bring to a boil, loosening any browned bits from the pan. Cook, uncovered, until liquid is reduced to 1/2 cup. Pour over pork chops; sprinkle with parsley. Yield: 4 servings.

Nutritional Analysis: One serving equals 232 calories, 11 g fat (4 g saturated fat), 79 mg cholesterol, 383 mg sodium, 1 g carbohydrate, trace fiber, 24 g protein. Diabetic Exchanges: 3 lean meat, 1-1/2 fat.

Take muffin pan, line with muffin papers. Fry finely chopped onions, bell peppers broccoli in a frying pan until aldente, mix in beaten eggs, poor mixture in muffin pans and bake until eggs are solid. Take one or two in your lunch bag, cool de remainder for the next day or day after. I did not try to freeze them, but that may work too. If that works, you can make ahead of time and have lunch to grab. a combine with some fresh fruit and you are good to go. The protein helps prevent dipping blood glucose levels.

This sounds yummy too! I'm not big on pork so I might try it with chicken but I'm trying it!

Thanks everyone for all of the recipe and snack ideas. Thank you so much to the user who recommended Ziplist! I tried the Santa Fe chicken and rice and it was soooo good! I have discovered that I need to eat 8 to 12 times a day to keep myself from becoming dizzy and passing out. Wow, right? Peanut butter, bagels, apples, grapes, yogurt, chicken breast, brown rice and loads of water have become everyday staples. I eat complete meals during breakfast, lunch and dinner and when I snack I normally have 2-3 items at a time (ex: bagel c peanut butter, yogurt, cashews). It is so much easier to pay attention when my stomach is not barking at me!
