Hey everybody! I'm starting LVN school on Friday and I thought it would be a good idea if we got a thread (is that what this thing is called?) going for snack and food ideas. I know it would help me and maybe a few others! So post your go to grab and run snacks for school and clincals and those easy peesy dinner ideas! Thanks!
I am enclosing a recipe for a fave salad.Ingredients
1 cucumber, peeled, halved lengthwise, seeded, and cut into 1/2 inch dice (about 1 1/4 cups)
1 pint grape tomatoes, quartered
Table salt
3 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
1 medium garlic clove in garlic press
15 oz can chickpeas drained and rinsed
1/2 cup pitted kalamata olives chopped
1/2 small red onion, minced
1/2 cup chopped cilantro
Romaine heart cut into 1/2 inch pieces
Feta Cheese, crumbled to top
Black Pepper
Directions
1. Combine the cucumber, tomatoes, and 1 tsp salt in a colander set over a bowl and drain 15 min
2. Whisk the oil, vinegar, and garlic together in a large bowl. Add the drained cucumber and tomatoes, chickpeas, olives, onion, and cilantro. Toss and let stand at room temperature to blend flavor, 5 minutes.
3. Add the to romaine and feta toss to combine. Season with salt and pepper to taste.
I keep lettuce and feta in one container and the other ingredients in another. I then take a serving from each bowl mix together and enjoy. Yummy!
Thanks this is a nice combination! And, everything but the Feta is Paleo so I can actually eat this I would love a vitamix... maybe someday!

I love my vitamix and make smoothies and soups. I cut veggies and make a hummus as a dip as well as taking pita chips. For true meals I plan to cook on weekends and package meals since I have to cook from scratch to make sure our food is all halal. I think there will be lots of sandwiches in my future as well.
