I live in Arizona and things are just as bad here. There are tons of nursing programs. You should read some posts on the AZ column. Things are bad in CA and NV too as far as I know.

I wouldn't take to chance if you dont have the license to do it yet, otherwise you would practicing outside your scope of practice, and risk losing your license as far as I know.
