This may be a silly or obvious question, I just am curious if a person has their masters in nursing education, are you limited to only teaching nursing courses?

I had not thought about it but am curious about the answer. I would think we could teach A&P...

At the college level, most schools want their faculty to have at least a Master's Degree in the field they teach. Just because I have a PhD in nursing and took a couple of 6 political science courses as an undergraduate -- doesn't mean I am qualified to be a political science professor. I have no degree in political science, just 6 undergraduate courses.
Do you have a 2nd graduate degree? Without that, you would probably not quality to teach in another department of a university.
However, you might be able to teach some supporting courses to nursing students. For example, you might be able to teach a "pharmacology for nurses" course or "anatomy & physiology for nurses" course. But that is different from being an actual member of the "Biology Department faculty," teaching those subjects to students seeking degrees in those other fields.
Of course there are always exceptions under special circumstance -- but what I have described is the norm.

Look at the job postings for your local junior colleges and see what min qualifications they look for in instructors of various subjects.

All for about nursing minimum wage, or nothing more than what an ADN makes.
I applied for such a position a few years ago. I didn't get it, thankfully, and it paid about 30% of my current NP salary.
I am guessing you have either a high earning partner, or a very low spend alternative lifestyle.
