Anybody have any recipes for healthy snacks or lunches to get through a long shift? I would love to hear some ideas!

I think it's Orville (sp?) that has microwaveable kettle corn. It's sweet and salty and oh so yummy lol.
I also like LaraBars. A bit pricey, and definitely high calorie, but natural ingredients etc.

I take dried fruit and mix it with cheerios, sunflower kernels add a few mini chocolate chips----I cannot digest nuts, so I use this for a trail mix like snack, it helps to keep me going and is not overly in calories etc. Those fruit cups by Dole seem to be good, you can get them in natural fruit juice, whole fruit like apples, banannas are easy. You can always prepare some tuna salad at home and take some crackers with you to work and make an easy lunch/dinner that way. Whole hard boiled eggs are full of protein and fill you up as well. It is hard to stay healthy and quick!! A lot of nurses I work with buy the little Quaker Oats single serving bowls and eat them at work.
I've seen the 100 calorie serving sizes for popcorn. I'll have to pick some up and give it a try!
The trail mix sounds really good! I think sunflower seeds would be yummy to use in it!

For lunch or dinner I take a can of chick peas, drain them and mix with olive oil, garlic and pepper. Bake until crispy at 420 in a pan.
In a second pan I bake mixed frozen vegggies. I mix the two together with salsa and eat. Cheap, tasty, healthy.

I haven't had chickpeas before, but it sounds amazing! It sounds kind of like something I do with brussel sprouts.

I love tuna and boiled eggs, but I always avoided them at work so I wouldn't be the scourge of the break room for the smell!

Dried cranberries and smoked almonds are delicious together. Same for tart green apples and sharp cheddar cheese.
Plus, my husband and I usually eat dinner leftovers for our work lunches. So if you cook healthy dinners, then you have healthy lunches. My favorite recipe site: http://www.skinnytaste.com
If you like chickpeas and tomato based dishes you will enjoy this. It's a balanced meal with the veggies too because you're getting good protein and veggies.
