A parent asked about nutritional and weight loss information/assist for her overweight son. What would you do with that?

I'd refer to PCP.
But you could also reinforce good dietary habits.

Refer to PCP and provide some resources like Kids Health https://kidshealth.org/en/parents/overweight-obesity.html

I agree to refer to PCP and link to sources such as CDC, My Plate, or if your state has any good resources. Also if your school cafeteria has nutrition information for food served link them to that.

I had to chuckle about this...Unless this parent just arrived from some remote, yet undiscovered village, or she has been in a coma since her son was born, I can't imagine she hasn't been exposed to such information. I'm sure you were very professional...?

That was, of course, what was running through my head!
