Do you think it matters whether or not you wear heels or flats to an interview? Obviously I know high heels are a no-no. What about pulling hair back vs wearing it down??

Wear your hair up or back. Flats or small heels. A skirt and jacket suit is professional. Always over-dress, rather than under-dress. Whatever you wear, make sure you are comfortable. You might be given a tour and have to do a lot of walking. Minimum jewelry.

I wear 3 inch heels, but they are tasteful and more business oriented. Hair down or up is okay as long as it's near, clean and tidy.

I am sure you read somewhere that more beautiful/handsome/prettier/etc people earn somewhat more than the lesser counterparts. I didn't believe that at first, but trust me, if I am going to an interview, I will make sure to put the best clothes and style I have. Like above mentioned, dress up not down!
