How about statistics? Or Human Development (from birth to death) in psych?
Or anything that deals with intercultural stuff like intercultural communications, or cross-cultural anthropology... etc.
Or classes in group communications.
Learn a second language or a third language where it might be helpful in the nursing area you are considering (From Spanish to Chinese to Farsi to American Sign Language)
Take some good PE classes to get in shape, if you are in shape, take some to keep in shape.

If you're not currently a CNA, you might want to consider taking the classes and becoming certified as a nurse's aide, then get a part-time job in a hospital to get some good experience. It really puts you ahead of the learning curve, plus you learn how to organize and manage your time, which is a HUGE help when you finally get out on the floor as an RN. :)

What about a medical terminology class? I took one years ago and it has been immensely helpful to me in nursing school.
