I think the reason that COVID educational material is so sporifice is because the situation is so rapidly evolving. Things that seemed impossible a few weeks ago (I.e. reusing PPE between patients) have now come to pass. Resources that provide CEUs are particularly lacking, since the credentialing has a bit of a delay; by the time the CEUs are official, the info is probably all out-of-date.
The AACN (American Academy for Critical Care Nurses) has a few pertinent modules on patient management. They aren't COVID-specific, but they include information about ARDS (the diagnosis of people who become critically-ill with COVID).
Usually you have to pay for AACN modules, but right now a handful of their modules are free to everyone. I think the free CEUs include topics like infection prevention, ARDS, ventilation modes, and proning ARDS patients.
My facility sent this out to everyone to brush up for those staff that do not typically care for critical pts.
