I'm planning on taking
Microbiology (both lecture and lab)
Anatomy and Physiology II (just the lab)
Biochemistry
Pharmacology
Does this sound too much? Should I take more of the "easier" prerequisites like Anthropology or Literature? Pharmacology is the only non-needed prerequisite I'm currently planning on taking.

My anxiety just went up looking at your course list :) I do not miss those days! Personally, for me, myself, and I, I would have found that much science all at once too much. I'd drop the not yet needed Pharmacology course and take something less strenuous.

Yes, definitely sounds like too much to me. But hey, maybe you're really great at sciences and have a ton of study time available... if so then maybe?
