In Welsh, David is pretty much "Dafydd." So Taffy is a nickname for David. (Sounds like Dafydd in a Welsh accent) and at some point became an acceptable given name for girls. Not sure if it was ever a given name for boys, but it's kinda like the Welsh version of "Davey."
And by the way, even though I went to all of the trouble of explaining this, I think in the English speaking US, Taffy is an awful choice for a name for either gender!

But I love to eat it!

Dafydd or Dewi would be correct. The patron saint of Wales is " Dewi Sant" or translates as Saint David

Never known a girl to be called Dafydd, or Taffy

Taffy is not a nickname for David, read my above post for clarification.
I am Welsh, still live here in deepest darkest Welsh valley and Welsh people do not call men called David Taffy

Knew a family whose last name was COURT; They always joked they should have named their kids: Motor, Tennis, Divorce, and Small Claims. There were a few other suggestions they had, but this is all I can remember right now.
