Burned my durn carrots tonite! I actually had a craving for them, hmm... Anyway - worked tonite, it went well, haven't been doing a whole lot. [MOUSE]You guys ROCK![/MOUSE] I am so impressed!

Zoe...sorry to hear about your carrots, and are you still looking for recipe for turnips? We just slice them and boil them in small amt of water, butter and pinch of sugar....very good this way, my step-mom makes them like mashed potatoes which seems weird to me, but isn't much different than the way I fix em.

Hi everyone! Still on it over here, too. The scale says I lost more, but I don’t believe it because I woke up pretty dehydrated this morning, so I’m going to stick to my three-day rule and not post till it stays for three days. Don’t want to set myself up for disappointment.

We had the roast I mentioned yesterday except I didn’t make the gravy or the noodles. It was pretty tasty, with a couple of potatoes, the mushrooms, and the Worcestshire (or however you spell it). Another condiment I like to use is McCormick’s pepper. Comes in its own grinder and has an assortment of various pepper types. The flavor is quite interesting.

Thanks, Blue, I’ll try the South Beach site. Since we only buy boneless, skinless chicken, that’d be perfect for the marinated shishkebobs you mention.

Muffie, speaking of Miss Crowe, I find that I have the exact opposite problem – all these vegetables constipate me. Yesterday I had a lot of really painful bloating, I dunno why, do you think it could be from the half-head of cauliflower I had for breakfast and the egg salad for lunch? (And supper the night before, and lunch that day too?):lol2:

Hiker, congrats on the pinning! I’m so glad you enjoyed it. I still get misty thinking about mine. Of course, you’re always welcome to join us for dinner, even if only virtually! That roast was very simple to make, just remember to put the portabellas in about an hour before done-time (I would’ve added some fresh green beans or maybe a little squash – the tiny whole yellow or green ones, leave the skin on – but someone ate them.)

Zoe, sorry you burned your carrots. I don’t often burn my veggies because I usually nuke them. But even that’s not really safe...I once had an interesting cooking experience with spaghetti squash. I pierced it a few times with a fork, but didn’t cut it before I put it into the microwave. A few minutes later, I had an explosion that blew open the door to the microwave and spaghetti squash covering every imaginable part of the microwave.

Today I’m making fish chowder. It’s tasty, easy to fix, and has a lot of nutrition but very spare with the calories. Hmmm... might have to run out for some fresh parsley.

I pretty much do the mashed potato style, I dunno, more comforting I guess.

Different from regular raisin bran? I had the regular this am and I have probably used more tp than you! Regular raisin bran has 8. Flax is in "go lean crunch" which I love but it makes the most AWFUL TOOTS!

I think the constipation might be from not enough h20, and, believe it or not, not enough (of the right kind of) fat. Possible?

oh my gosh - you made me laugh so hard! Well, THAT is one way to clean a microwave! (it's how I do MOST of my cleaning - something spills or is sticky or etc... )

I ruined that pan BTW, not going to be able to get the black out of it I'm afraid!

It is so funny, because I checked for doneness less than 10 min before, and I didn't note how much water was in there - it seemed to be plenty enough (I tend not to use a TON of water so has not to remove all the vits, and I kinda steam them...).

Anyway - I'm waiting for the baked potato to cook in the micro (I know how to do THAT!) and I'm thinking, check the water, check the water - did I check the water? You ought to go check the carrots... was there enough water? Then of course I smelled them! Oh my gosh WHY didn't I listen to myself??

Well, if this is the worst catastrophe in my life - I've got it pretty good, don't I? lol

How do you nuke veggies and do they taste as good?

Actually, they taste better. Cook times depend on what you're cooking and how much of it, as well as how crunchy you like it, but the microwave will steam veggies with very little water, leaving more nutrition and color, and that's why I prefer it.

So for carrots and broccoli, I generally will cut it up, put it in a microwave dish, rinse, get it all good and wet, then leave about 1/4 to 1/3 cup water, cover and cook for a few minutes. Usually two servings will take about 3 minutes. You can continue to cook it if you like it less crunchy, but test it pretty frequently till you get an idea of cook times for your favorites.

Sometimes with broccoli, I just need a different flavor, so I'll sprinkle some Teriyaki sauce over it or whatever before it cooks. Yum!

Spinach is probably the easiest. 2 -3 minutes for a whole big bag, but you still need to strain it or if you're a purist, drink the juice. It's good for you. ;)
