I'd like to know which careers ,health and non health related,have the most job openings.Apparently,the job market isn't that great for Nurses,especially new grads.'

True. But you better apply soon before the word gets out if you want to work as a nurse. In my country, military nursing has received tons of applicants and has met their quota. The common military corps is still open though.

In general, accounting grads are still doing alright.
Certain sectors of engineering are still doing OK: Petroleum, biochemical, power systems, certain segments of environmental, some areas of civil engineering. Probably a fair amount of competition for some of 'em (especially the CEs) but it's not nearly the commodity field that is nursing and being a standout student will open doors.
Environmental chemistry.
MDs are always in demand.
Genetic engineering.
