Where to take online course?

My first thread here...probably a stupid question...

I'm a little doctor in a foreign country, and for some reason decide to stop my job and apply for a 2nd degree BSN in the US from abroad. I've taken most of the prerequisites in med school, except nutrition and human development. Now I'm thinking of taking these two online, but there are so many colleges out there and I don't know how to research, can I have some suggestions? The colleges I want to apply don't have them online.

btw whenever I search for online courses there's alway U of Phoenix in the Ads, WTH is this school?
