I am interested in getting specialties in family practice and psych. What is the best job to hold before entering into the program?

Choose one. Don't try to do both.
I have heard of NPs with 2 specialties. Is this possible? If so, what steps would I need?

Please, just no. The education is very superficial, and no one will pay you extra.
Would I have to specialize in pscyh if I wanted to do work in mental health? Or could I just use FNP? Not sure how it works.
These are two very different specialities. You should have extensive psych experience as an RN.
Otherwise you'll be handing out any RX the patient asks for, a bunch of narcotics, and filling out a ton of disability paperwork for people who claim they hear voices.

Any time you work with an ill population you are getting exposed to psych patients and any time you are working with psych patients you will have people with medical problems as well. None of these exist in a silo. You will need to choose a primary specialty.
An inpatient geri-psych unit might fit the bill
