The only thing I can think of, and this may not be what you were thinking at all, is that RN's can become Diabetic Educators. Obviously, they teach about far more than diet, but I believe that diet and nutrition are a big part of what they teach and that a good understanding of nutrition and low glycemic principles is key.
My hospital has 3 diabetic educators and when a patient gets a new diagnosis of diabetes, they come around and talk with them and give them materials about their new diet.

Congrats on completing school. Congrats on wt. loss. This is a great question. I think that there will be more use of this type of combo. in the future. We are a nation of obese people and we are seeing so many bariatric surg. that there should be more work for someone like you with these interests. Diabetes Ed. is a great option, also.
Best of luck on your voyage of discovery in this area.
