I think this really depends on the person...to me making a generalization that everyone gains weight in nursing school sounds like the old "freshman 15" when people go off to college and gain weight. Personally, I lost weight throughout college. I think if you make a lifestyle choice to eat healthy and workout (no excuses, like brushing your teeth everyday) and learn to balance stress, then you make it happen and avoid the gain. I guess if you're someone who wants to gain weight, hopefully its muscle and not fat.
I didn't gain weight in nursing school either. Actually, I have been out of school for a year (and have yet to land my first nursing job) and gained around 15 pounds.
I actually have found that the people who gain weight are the more social ones--I think it is due to going out to eat a lot and studying in groups (and they tend to study with food). Just my observation and opinion.
I make my own bacon, egg, and cheese sandwiches ahead of time and just heat them up when I get to school. I'm also a huge fan of yogurts and nut-based snacks. Emerald makes grab bags of fruit and nut breakfast blends that I swear by for snacking throughout the day or I'll splurge someplace where I can get the ingredients in bulk and make my own when I get tired of the pre-done ones.
NO, everyone does not gain weight. In fact I've lost 5 pounds...I make it a point to exercise at least 4 times a week. I've been doing this for almost 2 months and I've noticed a big difference in my stress level.
I pack nuts, fruit, protein bars and protein shakes for school. I also make PB and Jelly sandwich or turkey on rye.

Is it true?! Does the average student really gain weight in nursing school?! Does it matter if its LVN, RN, CC, 4 year or for profit?? OMG! Yes! I. CAN. NOT. WAIT!! I have been trying desperately to gain weight for years and nothing has worked! Just 15lbs and I will be satisfied! It doesn't matter where the weight goes, I will crunch it, squat it, jog it into the right places! Oh yea, and I'm looking forward to learning and being a nurse and all of that. Haha. ^_^
