You would need to obtain a nursing license in any other country you wanted to nurse in first.

As mentioned a lot will depend on the country not just for nursing license but also work permit/visa

How long of a contract are you looking for? There are 1-3 year contracts, usually two years, available to go to Singapore, Dubai, Australia, and Saudi Arabia. The recruiting agencies coordinate your licensure and work permits.
You can also work on Private Yachts. In that case you don't need special visas or anything. You work for a certain number of months and then have a month or so off. Some work as contracts that have to be renewed by some hire you on a long term basis knowing that every few months you take a month off for vacation. Yachts have a better work environment than cruise ships as the hours are not so arduous and you have days time off in the evenings and on weekends.
