Does your program give you guidelines?
Sometimes I find if I just free write aka just throw all my ideas on paper, even in incomplete sentences and phrases I can find a theme and then develop my essay from that. For me it's easier to start in the middle or at the end and then work my way back. The intro sentence is usually the last thing I write.
Yup, here's what the website (BSN Application Instructions | School of Nursing | The University of North Carolina at Chapel Hill) says:
SAT ACT?
SAT and ACT scores are not required to apply to the School of Nursing. Should your Admissions To Do List indicate that you need to submit those scores, please ignore the item as it will be corrected internally by the Office of Undergraduate Admissions.

Can anyone who has been accepted to any nursing program out there, shed some light on how to write a good essay?. I am truly struggling with formulating my thoughts into an essay. I know why I want to be a nurse deep down inside but I am having a hard time putting the words together without being too generic. Please help!!!
