wanted to know which one of the following jobs are more fulfilling...I know both are compensated very well for what they do, I just wanted insight Into quality of life/ stress for both.

Which is more "fulfilling" is a personal matter. In which specialty would you rather be working?
I identify more with psych...however I don't ever want to regret not trying CRNA...I find both interesting
Are you currently a practicing RN? I suggest you get some significant clinical experience in both psych and OR, and see if that helps clarify which area you think you would prefer.

I was kind of wrestling with which of these two fields I should choose as well. I currently work full-time ICU and per diem float pool. I am sent to psych a lot because a lot of other nurses are scared to float there. I find psych very interesting. Psych makes for a nice OT job because it's usually not very physically demanding. Sure, it can be stressful in it's own right, but IMO the stress is nothing like the stress you experience while working in ICU. Sometimes the thought of being a provider and not having to deal with a-fib rvr, hypotention, traumas, etc. seems refreshing though.
After a lot of thought and self-reflection, my profound interest in hemodynamics and critical care made me want to pursue anesthesia. Sure, it would be easier to do a pmhnp program because I could attend a local program and keep working, but I see myself enjoying the role as an anesthetist more. When you do the math and compare salaries along with student loans from not being able to work while enrolled in a CRNA program, your take home will be pretty comparable to a pmhnp when all is said and done. Since compensation is comparable, just be honest with yourself and choose whichever you feel fits your personality and interests better, regardless pay.

that couldn't have come at a more appropriate time. I feel more drawn to psych even though I plan to start in the ICU.
