I think that is a great idea! You could type up a letter that states why you have chosen her, what qualities she possesses that made you choose her, and why you would be honored to have her pin you. If she is a nurse herself you could include something about wanting to model your career after hers or something like that. I think it would look really nice if you could have it printed on some nice parchment and send it in a pretty envelope.

"Dear (name)
On (date) I will be graduating from nursing school. I would like to request the pleasure of your presence at the commencement, and I would also like to request the honor of your participation in the pinning ceremony. This is a very special part of a nursing commencement and we are allowed to be pinned by people who hold special places in our hearts. I choose you."

I had my mother pin me. I did it as a surprise christmas gift. She had pinned hundreds of LPN's over the years but she was able to pin her son on the fly.
