Hi guys...

I hit on putting my olive oil in the frig 'cuz I'm cheap and it makes it last longer so I don't have to buy it so often. It sometimes goes rancid (smells putrid!) before I get half thru the bottle. Side effect is it makes it spreadable,... I must confess that the first carb I will be re-introducing is a nice tall, very cold, BEER!

:lol2:

Thanks for the tip on olive oil, and it is cool hearing people talk about steps they are taking - helps motivate me - (now if one of you were here first thing in the mornings to get me going that would help even MORE!) :trout: might work!

edit: ps, I meant to say LOL re: the beer, isn't that about the most carb-y thing one could have?

As for me, I would be the classic "swim to the bottom and never come up" beer drinker - kinda like me and sugar ;)

Another good thing Zoe is to buy fresh/frozen veggies any time you can instead of canned ones and cook them as little as possible to retain most of their nutrients. I'm sure y'all already know that, but it's one of those things I have to remind myself from time to time because the canned stuff seems more convenient to me. I like steamed broccoli and cauliflower(just barely so it is still crunchy) with a little bit of cheese (low or no fat preferrably) melted on it - gives it flavor and gives me some dairy since I am bad about not consuming enough of that. You can shred up some left-over chicken/turkey and mix that with it and viola - a nice, healthy meal. Er . . . at least it is for us weirdos who don't mind that kind of thing - hehe.

Another thing that really works well for me is to make a big salad and then put whatever the main course is on top of it. It almost always tastes good and is much healthier than eating a huge plate of whatever the main meal is. For example, if you are eating mexican food, a big plate of salad with a little bit of the taco/burrito mix sprinkled on top and maybe a crunched up chip or two for texture - it doesn't take much to make it taste good. Same goes with left-over roast, turkey, chicken, a broken up hamburger, etc. etc.

Thanks Tweety - I started class yesterday and we are doing IV therapy. We thought it would last a little longer but we are only getting three days of it. We had lecture last night, then practice Tues. & check-off Thurs. Yikes! I am nervous about it. Sounds like you are finally kicking that bug though - thank goodness! My little girl is getting one and she is just miserable - poor baby.

Hi Bluehair, nice to meet you too! Hope your stay here is long & enjoyable. I love this thread, it really helps to keep me on track.

Oh, I was good at the lunch yesterday - yeay! I am starting to get hungry though, so I think I'm going to go munch on some veggies I have in the fridge. :)

Hi guys!

No curves for me today - tweaked my back somehow, one of those doing normal ADL things and BAM. Time for an ice pack and some Skelaxin. Saw the chiropractor earlier, so it is a bit better, but telling me not to push my luck.

Recipe: Turkey 3-bean chili

1/2 - 1 onion diced ( or buy the pre-diced stuff)

1 lb white meat ground turkey

2 tbs chopped garlic (I use the stuff from the jar)

1 can small navy beans

1 can pinto beans

1 can black beans

1 can chicken broth (I use the organic stuff)

1 can low sodium diced tomatoes

1 can low sodium diced tomatoes chili ready version

1 small can diced green chilies

shredded carrot (can find preshredded at the store)

1 can corn

chili powder to taste.

Drizzle some canola oil in the bottom of a (preferably non-stick) pot (deep). Saute onions until they soften, then add turkey. Saute until turkey is cooked (juices clear, no pink stuff left). While turkey is cooking, open all bean cans and empty into collander. Rinse beans well. Stir turkey. Open tomatoes, corn, and chicken broth. After turkey is done cooking, add rinsed beans, tomatoes, corn, broth, carrots, green chilies & chili powder. Heat on high 'til it comes to a low boil, then turn to low and simmer for at least 15 min. If I am in a hurry, after that I turn it off and let it cool for aobut 10 min to an edible temperature, or let it cook a little longer. Cooling before serving helps flavors to meld better.

Top with some fat free sour cream and shredded reduced fat cheese, and a SMALL handful of multigrain tostito chips.

My husband (NOT a health fan) loves it. See what you think....

Lotsa veggies (tomatoes, carrots, corn) & beans. Reheats very well!

Later!

:biere: (me on Saturday...)

Hi Gentle! Glad things are staying stable. See you when you're around. :)

Zoe - I was having trouble with the server too.

Bluehair, that sounds delicious! Yum.

Tweety - hope you are fully over your yuckies by now.

I am proud of myself, I went out to eat with my friend yesterday and, even though I usually indulge when I do that, I was very good and didn't go off of my diet. I had a taco salad without the shell - very yummy, tons of lettuce and a little meat with some salsa and cheese. Yeay! I must be re-finding my willpower - WooHoo!!! :)

Everyone, have a great day!

Hi everyone!

I am amazing myself with my willpower. Extremely hectic day yesterday, complete with pediatric code (she did fine, mucus plug, no problems at all now). Lunch was all pizza covering the entire break room table. AND I DIDN'T HAVE EVEN ONE BITE! I LOVE pizza, and stuck to my chicken caesar salad. :yelclap: Now if I can only get the exercise in more regularly I won't be stuck at the 4 pound mark! Heading out of town later today for 48 hours of R&R. We will be shopping for a lap top for me to use for working on BSN.

Yup, looking forward to that frosty cold one, even if it is the only carb I re-introduce. It's my reward for doing as well as I have for 2 whole weeks!

Have a great weekend everyone!

Blue - enjoy your reward! That is awesome, I am so proud of you!!! I think this is going to be a good year for us, we have managed to defeat temptation already - WooHoo!!! Hey, congrats on working on the BSN too, that is awesome! I plan to do that once I get the ADN under my belt, I hope you do great. I am in panic mode right now because we had our lecture on IV therapy on Tuesday, then our lab last night, and we are going to check-off next Tuesday. Yikes - I am scared to death - I hope I do ok. Then we will be starting Med-Surg, glad I had a break in-between all this stuff - whew! Anyway, enjoy your break and congrats for being so good!!! :)

Yeah, pizza especially brings on hunger and/or carb cravings for me BIG time - it is the best way to sabotage myself esp. because it looks soooo innocent sitting there and "everybody" eats pizza lol

As to the lap top - consider that ALSO a reward - You are doing great!!!

IV's can be intimidating - just know that seasoned nurses don't make them all the time either.

I remember my first checkoff, I was a new nurse (we didn't try them in school). My nurse manager was observing, had this healthy young guy with ropes for veins. I did GREAT and I was so excited - I forgot to take the tourniquet off when I released the roller clamp - almost blew the vein!
