I have read several threads that talk about how hard it is to get a job after graduating. Is that true? Is it actually difficult? Because every time I tell someone I am a nursing student, the first thing they say is "well you'll always be able to find a job." Is that not the case anymore? I know it mostly depends on the region, but I'm asking in general.

Yes, it is true. Just read through the threads here. Even the places where it was not as bad are now pretty bad as well.

The people that are telling you that the job situation is great are not correct. Do some research - talk with classmates that are ahead of you in school. Ask your instructors how many of the school's new grads have jobs after graduation. In my area, the number is dismal.

I live in the Dallas/Fort Worth area of Texas, which had a wonderful nursing job market when I first moved here in 2005. I could walk into a facility and be hired the next day.
Fast forward to 2010. Some local new grad nurses are having to accept work as cashiers at gas stations because they cannot find employment in the nursing profession. It is often taking experienced nurses months to find work. The job market is rough, and nursing is not immune to the effects of a sorry economy.
