Ado I don't think I've ever used almond flour

NJ22 that is a long night

Stars I hope she is less stubborn today

Hi Tweety

Was another pretty good day at work.  Did get a new case, but otherwise was fairly quiet.  Had time to help out at the end of the day.

After work was fairly quiet too, just ran an errand or two and exercised

Today have a potluck after work.  Did some of the prep work yesterday, will complete it today.  Fairly simple one, mini tacos using those scoop type tortilla chips. Work itself should be uneventful

Going to be another warmer day in the mid 80s

Good morning!

Almond flour is popular with the gluten free, keto and low carb crowd.  I think that keto in particular is dangerous, and have issues with low carb, but there are some proven benefits to almonds, so that gets a pass from me.  LOL

Meant to get up earlier gut slept in.  Waffles was not having me sleep more than an hour past her bedtime and started to wake me up.  I had a couple of nights of poor sleep so I needed it.

Not much going on but the routine.  I'm washing the sheets and doing laundry, going to the gym and meal prepping some.

High Noon~

SiL came to get Nannie washed and dressed and took her to daycare. I have MY laundry to do, bedding as well as clothes. I have to go to the Frammiseee (that is my family's on-purpose mis-pronunciation) I got a phone text that I had two scripts ready and the charge is $0.00! I don't know WHY it is zero dollars but, heck I ain't complaining. (for a change)

But first, Tinker says I have to take her out so she can drag me around the yard.

I have 'free-time' until I have to pick up Nannie at daycare at 4:45 PM.  Wheeee, uh, no, that would also be Booooo!

One of my issues with Twin A's book of recipes from the video game is all the unusual-for-us ingredients, some of which are hard to find. So here I am with this package of almond flour. And the recipes one finds are aiming for the keto and low-carb crowd so don't use much sugar. It's useful for people with gluten sensitivity, too, I'm sure. If I make them again there will be some actual sugar involved. The almond flour, eggs, and baking soda gave the muffins a nice cake-y texture; they just needed to be sweeter.

Last night Twin B and I went to band practice. I am definitely going to have to practice. Got home about 9:30 and Twin A was wanting "help" with his assignment for his statistics class. They're using some programming language called R. The instructor gave them a tip sheet that fell short of explaining how to get the answers. Between the two of us and some web searches and a You-tube video we figured out this assignment. But, ugh, there is no explanation of the grammar and syntax of the statements (why is that comma required? what does the square bracket mean?) This old programmer was frustrated. It was due at midnight and got completed shortly before. Then, did I have the sense to just go to sleep? No, I did the Wordle, the crossword, and the sudoku. LOL I did not want to get up this morning.

Tomorrow I have lunch with my friend D. The choir will sing Sunday. The anthem has a catchy tune but the words include "for we are a holy nation" (over and over)

-- and I *know* or think I know that it's not meant in some Christian Nationalist way but it still makes me uncomfortable in today's political climate. I hate today's political climate.

my dh has made some purchases for odd (to me) ingredients, like coconut, almond and garbanzo bean flour. I have been using them up by subbing in 1/4 of a cup for all purpose flour in baked goods. I don't think it affects the taste or texture.

Lazy day for me. I took the dogs for a good, long walk. I started a little newsletter for the local Master Gardeners. I got a little frustrated with formatting, so I'm taking a break. I called an insurance company to follow up on a letter about missed payments. I spent an hour on the phone with this same company in June to iron this out, and spent another hour today. I was assured that everything was fixed. We shall see.

Stars, could BiL string a cable across part of your yard that you could clip Tinker to? We have done that with our dogs when the fence needed repair. Ours was attached to the deck and  a tree. We could put the dog out and they were a little free-er to roam without being attached to a leash. I saw dog owners do that in the campgrounds, too.

Hello all!

I am interested to read about your (plural) experiences with other-than-white-flour.

Stars, I'm glad you get at least a few Nannie-free hours today!  Are your gypsies behaving?  I'm sure Tinker loves to roam around outside, and sniff and sniff and sniff...

Ado, I forgot, what do you play in the band?  Yah, programming, UGH!!  That's dh's and youngest ds's territory!  Although these days, dh says he is not up on the 'latest.'  We got notice of a security breach with a company connected with our insurance, and he has been on the phone with youngest ds (who works with cyber-security back east) re: what is the safest approach to this.  He is uncomfortable releasing lots of our sensitive information to another, potentially hack-able, source.  And the drama continues...

When I went to the grocery store earlier, it was *only* 73 degrees out!  Positively chilly, for us!  We spent yesterday walking in the Disneyland parks, and it was a little warmer then but not much.  It was actually very pleasant, with nice breezes.  Heard some good music, chatted with a friend who hailed us (I wouldn't have recognized him, I am so bad at names and recognizing ppl if I am not around them a lot).  I'm glad he called out to us, it gave us a chance to catch up.  We got our 10K steps in, too.

Today (after getting a few supplies at the grocery run) I made our usual Chicken Tomatillo Soup.  Dh loves it, it freezes well, and supplies us with at least five, maybe six meals.  I have done a little bit of cleaning, but not as much as I should!

Doggy is doing well, and LuLu continues to do well.  She has been playing with her sisters and her mum, late at night -- dh hears and sees them racing around.  🙂

Have a good evening and weekend!
