I'm a pre-nursing student. This semester I'm taking Chem, cell biology, algebra, and speech and so far I'm doing fine. Next semester I was thinking about taking Anatomy, Nutrition, and Microbiology, plus one more light course. A student mentioned that I may struggle with that combination in one semester. What do you guys think?

Chem and cell bio are doable sciences given that you study daily.
micro and anatomy are more tougher classes than chem and cell bio. They require more time input for studying and understanding. You want the best grades possible.
I take it you're squeezing classes together for financial aid requirements and to cut time spent shorter ?
Depending on your grades in chem and cell bio you can judge if you still want to take micro and anatomy for next time.
I have read somewhere that people do pass micro and anatomy in the same semester. I've seen variable grades though for that combination. those classes are hard work (in terms of extra study time )and keep you on your toes.

I am enrolled in A&P 1, microbiology, nutrition and college algebra next semester, too. I dont know if its do able but I will try.

I wouldn't go as far to say that it is not do able anything, because I don't know what kind of student you are! It will be challenging, because nutrition is considered a harder class. You actually have to study, and read the book. I promise you will probably be busier than what you want to be. Also you will probably have to adjust your work schedule. I will say good luck with whatever you choose! You can do anything if you put the time and energy to it!

Actually, anatomy and nutrition are the only pre reqs I'll have left and I can still get my Financial aid with those. I wanted to get micro out of the way because I heard it was a lot of studying and I though it would make life easier for when I start more core nursing classes.

It's doable but tough. I wouldn't do it again. When I took A&P I & micro together I thought I was in hell. My micro prof was super tough & I made it out with a C.
I am wondering about the work situation. Right now I'm working 40-50 a week as a home are CNA and it's been pretty doable for me and I've been able to maintain As in my classes. But my classes aren't necessarily the tough ones this semester. My parents told me I could move in with them while I'm in school and I'm trying to decide if that's something that will have to happen for me to do well.
If you plan on taking that many hard classes I would strongly consider it. When I took my hard sciences I works about 20 hours a week and spend hours in study groups pulled A's in everything but it was a sacrifice. Also now I am taking easy classes and working about 40-50 hours a week and pulling A's. They make you work in the hard science classes!
It seem like you are very dedicated to get through things. I believe it is doable if you put your mind to it and don't mind studying a lot. micro was a fun class too though. I took it during a summer semester so it was pretty intense due to time shortage. Since you're taking it during a normal semester you may have more time to think about the material. Perhaps you can ask to decrease your work hours to accommodate your study time needs?

I already finished my a&p I and II, both I got A-. Now my problem is, should I put Microbiology and foundation of nursing class together. Do you think is too much?

Did that very course load along with Speech and got all As... It is more than doable
