What's your favorite recipe? I recently discovered the joys of pressure cooking and would love to see some more pressure cooker specific recipes, but still wanna see your faves regardless of cooking method.

My current fave:

Boneless pork chops & easy au gratin potatoes! Stuck my fork in the pork chop and it fell apart!

Ingredients:

4 boneless pork chops, thawed

2 medium potatoes, sliced

1 cup chicken broth

2 Tbs. butter

few dashes each of salt, pepper, garlic powder & onion powder

1/4 c. sour cream

1 handful shredded cheese (I used fancy Mexican)

Directions:

Sear the pork chops in the QC for 3 minutes on each side, then set aside.

Cancel sear setting, and while still hot, melt butter in the QC, then add broth and seasonings.

Place the pork chops in the broth, then insert the Wire Rack.

Put the potato slices in the small Steamer Basket and set on top of the Wire Rack.

Cook on pork chop setting for 20 minutes, then quick release.

Remove Steamer Basket of potatoes and set aside.

Scoop out 1/4 cup of the cooked broth into the Ceramic Pot, stir in the sour cream and cheese until mixed well, then add the cooked potato slices.

Cover the Ceramic Pot and place inside the Inner Pot, on top of the Wire Rack.

Cook on pork chop setting for 10 minutes.

Quick or natural release - dinner is ready (and leftover meat for tomorrow)!

I prefer to swap out the sliced potatoes for frozen diced hash brown potatoes- they didn't get as mushy.
