Here is a recent article from USA today about nursing. You might see if it is appropraite for your parents or not.

Just a thought, you might want to emphasize modern nursing. Explain that modern nursing is so different than nursing decades ago (especially in your grandparents generation). But you better be able to explain some of the difference though.
Some nurses actually go into "Wholistic Nursing" which your grandparent should not have any objection to. Think we even have a forum on this particular area.
Shadowing is good. It gives you an idea. The only thing you have be aware is this, if you don't like it, it means you don't like that particular area of nursing, not the whole nursing profession. For example, some people can't stand nursing at the hospital but loves nursing in a school.
It sounded the real reason for your mom going against nursing is really the strong family tradition of anti-conventional medicine? Or maybe she fears that by you going into nursing, there is going to be more family tension or something? All her other "reasons" are not real reasons and some do not make sense (like you have to take lots of tests).
What else, you are very young, and it is common to change one's mind about one's major in school a few times. So, remind your mom about this because you might change your mind and decide to become, I don't know, an IRS agent instead :). Come to think of it... try to become something that is a hundred times worst than a nurse from your family's point of view (I don't know, become a bomber in the air force or something...), than becomming a nurse will seemed so much better... Ahhhh.... forget you ever read this...:)
