This Is my ultimate goal... I'm just starting nursing school. I was hoping to find a program I could complete largely online, but I'm not seeing one this specific. Instead, I see pediatrics, mental health, etc. Can someone give me a heads up on where (and what!) I should be looking?

I would recommend that you look at a pediatric acute care NP program, and then inquire if one of these peds AC programs would allow you to focus your practica experiences in peds endocrinology.
A primary care PNP program would not permit you the specialty focus that you seem to be looking for.

The vast majority of the Nurse Practitioners I worked with were general PNPs and they worked in specialties like neurosurgery, oncology, neurology. They didn't train as such in school and had very diverse backgrounds.

You are not going to find a specific peds NP program with endo. You have to do acute care peds np or primary care peds np. With acute care you can work in a hospital setting and primary care in can work in outpatient specialty clinic such as endo. Whatever program you chose try and request clinical with a Peds Endocrine clinic.
