When applying to nursing schools, what is exactly included in your overall GPA? Is it the cumulative average of ALL previous classes you've taken (I'm a junior in a arts major just now switching to nursing), or specifically the prerequisites that apply to the nursing major?

The school that I got my ADN at counted only pre-requisite courses in the GPA. Which was good for me as my first BA wasn't exactly a stellar academic experience :/
However, your school may do things differently. The most accurate answer would come from them, so call/write Admissions or the Nursing Department and ask.

My school only counts what you give them. For example, if I have all my pre reqs done with straight As, but I got a D in my second Anatomy class, they can't use it against my GPA if I don't put it on my application. (I would still have to retake with a C or better before program starts)

I would say that this varies for each school and program. A school I applied to allows for multiple grade attempts and will accept the highest grade submitted no matter what. The GPA portion is divided between science pre-requisites and all other courses. The science portion is worth more points that the general education.
Reach out to the schools you are planning on applying to and/or attend an information session if offered. I have personally found that I can get most of the information from the program's website or from attending an information meeting. If I had any questions remaining, I could ask during the Q&A portion.

The school I attended required transcripts for all post-secondary education; and included all grades in calculating GPA, regardless of whether the course was allowes credit or not.
