Minor in Spanish.

A few of my classmates did a psych minor. After our prereqs there were only a couple other classes to take to get a minor. Philosophy would be a good one too- extra ethics classes would be a plus.
Or you could make it easy on yourself and do the Spanish minor. Should be a breeze for you, right? I never was one to do something just so it looked good on a resume, but the world is a little different now and that might set you apart from the crowd.

If you opt to not minor in Spanish, any foreign language would be useful. Psychology sounds like a good one.

Minor in a field that genuinely interests you. It will nourish your soul -- and in the long run, enrich your career. If you pick a field you don't love just because some stranger on the internet suggested it and said it was practical, you will enjoy it less and get less out of it.

I would take useful classes like micro- and macro-economics, basic accounting, technical writing, research writing, any class with a research component... or look up the common prereqs for masters programs - even if they don't add up to a minor.
Or anything interesting. Some of my favorite classes were odd ball classes like textiles, plant propogation and weight lifting. They have been surprisingly useful. A well-rounded education has a lot of benefits.

I completed classes for a minor in aging studies. It's helpful for me because I want to eventually be a geriatric nurse. It also looks good because not a lot of people want to work with the aging, but rather with babies or kids.
