So I got a long weekend and am meal prepping for my son and I. So far I have made Mongolian beef with cilantro rice. Bolognaise sauce with casarecce pasta, Angel dream cake (gotta have desert), Today will be Beef stew which we will also have for dinner. I am also making stir fried chicken with Chantarelle mushroom water chestnuts and bock choi.
I usually make six of each which makes 24 preps= lunches for12 days. We usually have a protien shake for breakfast.Dinner requires some creativity I am working a lot of hours right now.
