So I'm thinking of getting completely off the grid. Leave everything behind. But I love nursing and want to put my skills to good use. How does one go about that in moving to a place like africa? I don't neccesarily care about pay.

Very simple. Make enough money here to be able to take time off to do medical missions. Enjoy!

This is exactly what I was going to recommend. Work 6 months in California, take on a mission for 6 months. Repeat as much as needed.
Rinse before repeating!

If money is not an issue I second the suggestions to volunteer. This should be by far the easiest way to practice away from your home country.
If actual employment is the goal it may very well be considerably more complicated to be able to work in a foreign nation. Best I can suggest is research all the areas you are interested in to see what the requirements for licensing will be and how difficult and/or expensive it will be for you to meet those requirements. It may not even be that your biggest hurdles will be in gaining the ability to practice nursing, look carefully at visa requirements and how they affect your ability to work. Some countries have huge hurdles to jump through before you are able to work there.

The Peace Corps has a program for healthcare professionals that's a shorter time commitment than regular assignments. Might be worth checking out, and it could give you connections for the future if you wanted to stay.
