Hi all - I'm beginning my first semester of nursing school next week and plan on packing a lunch since I will be in the middle of downtown with limited quick/healthy options. Would anyone like to share their quick go to (semi) healthy and portable lunch ideas?

If this is in the wrong forum, I can move it - just wanted to know if any fellow students would like to share here.

I just throw in whatever I have, although I use Tupperware and not the mason jar. I usually use spinach, mushrooms, cherry tomato, slivered or shaved almonds (or sunflower seeds, for crunch) and, if you have access to a refrigerator or can bring it in a "cooler lunch box", cheese. I bring a small can or packet of tuna and add that at the last minute, and sometimes a boiled egg. (Protein and veggies). I bring my dressing in a smaller Tupperware so the salad doesn't get soggy.

If you have access to a refrigerator and a microwave, leftovers are the best! today I have leftover red beans & rice. YUM!

That sounds great, and simple too! Yummmmmm I love red beans and rice, is it homemade? I've never tried to make it at home!

It's really easy to make at home; it's just a little time consuming because it takes about three hours to cook after you put everything in the pot. I do just like the old New Orleans housewives -- I put the pot on the stove and let it simmer all day while I hang out in the kitchen and do my laundry or lose hours of time posting on AN.
