I reached out to the PSON ABSN program during the holidays in hopes of finding out if the program transfers over graduate-level courses, but I have yet to hear back from them. With that being said, did anyone transfer over graduate-level courses that are necessary as prereqs in order to enroll?
In addition, I am aware that the school accepts portage learning courses. Does this include courses that require labs as well?

Yes, I was able to get an answer so according to the information I gathered my statistics courses from undergrad which have been completed almost a decade ago will be accepted (I can only assume some courses that are over 5 years get accepted). Now concerning the Human Nutrition course, I will be taking (again), the only difference is that it will be grad school level is due to the fact that it was over five years old. So yeah once again, it simply varies on the course. The lab courses online are all accepted! ?
