The only thing I used Excel for my in Biology class was to create graphs for data I collected from labs. My gf did the same thing when she took Chem.
However, most of the people in my class did their by hand as did most of the people in my gf's chem class. I'm thinking it would make you life easier if you knew simple proceedures such as creating graphs and what not but I don't think it would be a make or break scenario.
Make sense?
I've used it a number of times but that's only because (A) I have it and (B) I'm very proficient with it.
I certainly could not have done the same quality by hand but I could've met the basic requirements of the class.
I would guess that your math teacher really doesn't know what s/he is talking about.
I am just starting my pre-reqs and have to repeat Bio because I took it 22 years ago and my school requires that you take it again if it's more then 10 years.I was wondering if any of you have had to use Excel for Chemistry or Bio because my algebra teacher stated we will probably use it in both classes. I have a little working experience with Excel but not much. Please let me know if you have had to use this for any of your classes.
Thanks,

I just finished a year of General Chemistry and didn't use Excel at all (despite a proficiency). We had a graphing program that was tied to different probes (temp, pH, etc).
The program put automatically presented all collected data in tables and graphs, so we didn't have to use Excel at all.
We didn't graph anything in the chem class I needed before A&P.
Peace,
