I was wondering if I could work as an LPN(after passing the NXLEX-PN) during my last of an Associates degree program. I was told that in some states you aren't allowed to do that. I'm not sure what the state of Florida's rules are regarding that.

Contact the state of FL's BRN to find out if that is possible there. If they say yes, then contact your school. Some schools do not cooperate in the process for their students, despite it being allowed by the Board.

Keep in mind that it will be a year of LPN/LVN experience, NOT RN experience. So you're not going to readily qualify for all those RN jobs that say "at least 1 year's experience." My LVN friend ran into that roadblock after she got her RN and she had 19 year's LVN experience: the hospital still would not pick her up as a RN w/o RN experience.
That being said, it may give you a leg up during the job hunt--it's not RN experience but it is nursing experience, which will be more than a lot of new grads have.
I know it won't be RN experience but it will be nursing experience.It will alllow me to have a job and make money while I'm in school.
That 1st year of the ADN program is going to dry my money out because I'm going to have to stop working full time and work part time instead. It's also good because when I pass the NCLEX-RN and get a job as an RN It won't be my first time around the block working as a nurse.

maybe, maybe not. there's another thread on this around here somewhere, and a lot of people chimed in with whether it was possible/impossible in their states. your best bet is to call the board of nursing in your state and ask them, because they are the final authority for you.
