I'm graduating from nursing school in NH in May and moving out to San Diego to start a job in a NICU in July. Can I take the NCLEX in NH to get it over with? If I pass, what do I have to do after that to get my license in Ca?

Your best bet is to look at the BON website for CA and/or contact them. You could also inquire under the CA nurse section under Region on this site. I know you only have to take NCLEX-RN once but other states may have additional criteria such as CE's.

You should be able to take the California NCLEX at PearsonVue in NH, if you want. To start the process, go to the CA board of nursing website to find info about applying for their NCLEX exam. They may want you to submit things such as fingerprints, a passport photo, fees, etc, with their application. If you decide to go this route, I would highly recommend doing this ASAP to avoid long delays with processing the paperwork.

When you apply to take NCLEX with PearsonVue, you can indicate that you want to take the CA NCLEX. They won't ask you where you want to take the test when you apply. They will ask you where you want to test after they give you your ATT, and you can pick anywhere in the country.

The big thing is to get every bit of paperwork turned in ASAP. I went to nursing school in Ohio but took Texas state boards because I was moving to Texas. My big mistake was not going to the Texas BON site to see what I needed to do to take their NCLEX. I should have sent in paperwork to them at the beginning of my last semester of school, as their state BON recommended. I waited till my last month of school to do this and had an almost 3 month delay getting to take NCLEX and getting the license because of that.
