I can not join the military due to medical and religious reasons, and to be honest I do not want to join the military anyway, but I would like to do my part so I thought maybe I could volunteer one day. I am a Sikh too, so I would be wearing a full beard (neatly tied up while performing nursing duties for cleanliness and safety) and turban etc... We Sikhs have a rich military history, but I think I would stand out a bit.
What volunteer opportunities for civilian nurses are there if any?

You would need to contact the volunteer coordinator.

Just out of curiousity, there are many ways to give back to ones community (e.g. school nursing, volunteering at the county hospital, MSF, peace corps, etc). What is it about volunteering with the military that is so appealing?
Being Sikh isn'the barrier it traditionally has been:

I plan to volunteer and give back in many different ways, but I would like to do at least some volunteering for the military because I feel that since I do not serve in the military I should find another way to do my part for my country. Many countries expect all able bodied citizens to serve at least one term in the military. The military is just one of many volunteer opportunities I have planned for my life.
Well, from what I have read there is still controversy over whether baptised Sikhs can serve in the military, they have made exceptions, but some still oppose the idea.

..the entire military service is comprised of volunteers.
I don't understand the 'scope' of what you are trying to do - I don't think volunteering in a nursing capacity is an option..nor going oversees.
You could look at a local VA hospital as every VA hospital has some sort of volunteer coordinator and you could work with them... but probably at a much lower skill level then being a nurse.
