6 1/2 weeks into first job, when to edit my resume

I am 6 weeks into my first job as an RN (only two more or so left of orientation, yikes!) and according to my preceptor, I have no reason to worry about being let go before probation is up. During probation they can literally walk up to me and tell me to leave without a reason, so her telling me not to worry was awesome.

My resume currently consists of 2 jobs at a fast food restaurant (the same restaurant, just different locations). I climbed the ranks there from new cashier to assistant manager and worked for them for about 8 years. I continued to work as an assistant manager throughout orientation, both to help out and just in case I was let go from my nursing job. Yesterday it finally became too much and I gave my 2 weeks notice.

So I have 2 questions:

1) When should I add the RN job to my resume?

2) Once I do add the RN job to my resume, is it ok to take off the fast food job? It's the only other job I've ever had, and while I managed to turn some of the skills into ones I'd use as a nurse, they're pretty unrelated.

Why wouldn't you have already added the RN job to your resume? If you were to get fired tomorrow, I assume you'd want to apply for another RN position and your current RN experience is relevant, no? I've always operated under the suggestion to have 3 jobs on your resume at all times, if possible. Not sure where I got that from, but it's worked for me, even when there was a non-nursing job in between.
