I went to Washburn University for Nursing school 14 years ago. Back then, our entire class had to share two cadavers for A&P. Our dissection was done on cats and pig hearts, but we did have access to cadavers and often referred to them. If you really want to know your anatomy, you need to go to a school were you have the ability for hands-on experiences like these. It makes a huge difference in the kind of education you get.
